Bison + Quinoa Chili.

Bison and quinoa chili!

Recipe is based on this one:

I like experimenting with the recipe. Here is today’s version.

1 lb. ground bison
1 cup quinoa, soaked overnight with lemon juice
1 quart Water
1 tsp. Cinnamon
1 tsp. Cumin
1 Onion, chopped
1 tsp. Worcestershire sauce
2 cloves Garlic, crushed
2 tsp. Sea salt
2 tbsp. Chili powder
1 tsp. Black pepper
1/2 tsp. Cayenne pepper
1/2 tsp. Allspice
1 (6 oz.) can Tomato paste
3 Bay leaves
2 cups Kale, torn into small pieces

Brown ground bison. Add all ingredients together in a large pot or crockpot, bring to a boil, then simmer covered for 3 hours.
